  • 6 eggs
  • 1 small onion chopped
  • 1 cup cooked ham or bacon
  • 1/2 c heavy cream
  • 1 c chopped kale leaves
  • 1 c cheddar cheese I like Kerrygold's Dubliner Cheese from grassfed milk
  • 1 tsp Herbes de Provence
  • 1/8 tsp sea salt and pepper


  • Whisk eggs with heavy cream
  • Add the rest of the ingredients and mix well.
  • Pour the mixture into a heatproof dish and cover.
  • Add one cup of water in the Instant Pot
  • Place the trivet or steamer basket inside.
  • Close the lid tightly, close the vent valve
  • Press "Manual" on HIGH pressure for 20 minutes and let the steam release naturally (NPR.)
  • Serve immediately.
