Ingredients

lbs.
ground pork or turkey
1

onion
chopped
4
stalks of celery
chopped

green pepper
cubed

russet potatoes
cubed in one inch size

oz.
can of white navy or cannelini beans
drained and rinsed

cilantro
chopped & reserve ½ for garnish

tablespoon
tomato paste

chicken broth

Olive Oil
Spices

teaspoon
of cumin
½
teaspoon
of cheyenne pepper
½
teaspoon
of chili pepper
salt and black pepper to taste

chopped scallions for garnish
Instructions
Heat olive oil in a large pot.
Saute onion, garlic, celery, green peppers, in that order, for ten minutes.
Add ground pork and turkey and stir until cooked
Add tomato paste, spices, potatoes, chicken broth and simmer until potatoes are tender
Add beans and cilantro.
Simmer for 30 minutes.
Serve with chopped cilantro and scallions
