Whisk together the water and flax meal in a shallow bowl, and set it aside for 5 minutes or so to let it thicken up.
Combine the panko and shredded coconut in another shallow bowl. Thoroughly coat each piece of cauliflower in the flax mixture and then in the panko mixture. Arrange in a single layer on a greased cookie sheet. Bake for 20 minutes, flip, and bake for 10 minutes more.
While the wings bake, make the coconut glaze by combining all the ingredients for the Coconut Glaze in a heated pan.
When the wings are done, turn the oven up to 500F. While the oven reaches its new temperature, dip each wing into the sauce to lightly coat it. Arrange the wings back on your cookie sheets, making sure that the pieces aren't touching each other, then put them back into the oven for 7 more minutes. Serve immediately.
